Biography: Caroline Schiff Owner/ Executive Chef: ParadigmSchiff

A native New Yorker, Chef Caroline Schiff’s love for baking and pastries started early, when she was just a little girl making birthday cakes for her friends and family. Over the years, she never missed an occasion to whip up something sweet! After attending college in both Scotland and France, and being immersed in the rich culinary history and traditions of Europe, she knew she wanted a career as a professional chef.

In 2008 Caroline took an apprentice position at the Good Fork in Brooklyn, NY under Chef Sohui Kim. Under Kim’s guidance and mentorship, she eventually began cooking on the savory line and expediting the busy dinner service each night, but there was a nagging feeling that savory cooking wasn’t what she was meant to be doing. Chef Kim encouraged Caroline to pursue a pastry position in Manhattan, which set her career on the path to becoming a Pastry Chef. Sohui Kim continues to be a mentor and source of great support to this day!

By 2014 Caroline had worked her way up to Executive Pastry Chef at Mas (la Grillade), under Chef/Owner and James Beard Award winner, Chef Galen Zamarra. Following her years at Mas (la Grillade), Caroline found herself at Maysville NYC where she created and ran a robust, market driven pastry program. When the team sought to open a sister restaurant in New Orleans, LA, Schiff jumped at the opportunity. She was on the opening team at Kenton’s in New Orleans, and developed their pastry program, based on the incredible local seasonality and rich culinary history of the region. In 2016, seeking a new challenge, Caroline Schiff became the Executive Pastry Chef of Scoops & Sweets and the Greene Grape located in Fort Greene, Brooklyn.

In 2018 Caroline Schiff decided to branch out on her own and launched a consulting agency, ParadigmSchiff, LLC. She focuses on menu development, creative branding and strategy for food and beverage businesses. As a chef she also offers catering for corporate events, weddings and private occasions as well as stunning and creative custom cakes. More information can be found at www.paradigmschiff.com.

Chef Caroline Schiff has appeared on the Food Network’s “Beat Bobby Flay”, Viceland’s “The Untitled Action Bronson Show”, Genius Kitchen, and Vice’s popular “Munchies” platform. When she isn’t cooking and baking, Chef Caroline Schiff enjoys competitive running, and has completed five full marathons as well as many half marathons. She is a resident of Fort Greene,
