Voice of a Chef: Carlton

I’m Carlton, one of the chefs at Holy Apostles Soup Kitchen. I help to prepare more than 1,000 meals each weekday for homeless and hungry New Yorkers. I know what it is to be hungry and homeless.

I know what it’s like not knowing where your next meal is coming from. I’ve been in their shoes, so I know how important it is to serve a delicious, healthy, and filling meal. I like my job because at the end of each day, I feel fulfilled knowing I made a difference by helping someone who’s hungry.

I have a passion for cooking because I like to make people happy. The guests at Holy Apostles are always so appreciative for the meal we serve here. Their appreciation fuels me to do my best, and to put my all into every dish I prepare. Many of our guests have so many stresses in life that they aren’t able to think about nutrition. Part of my job is making sure that we serve our guests healthy and sustainable food, that’s also delicious. We celebrate this focus on nutrition – and raise much-needed funds for the soup kitchen – at our annual From Farm to Tray benefit.

At last year’s From Farm to Tray, I had just started working at Holy Apostles Soup Kitchen, but was excited to be involved and to prepare steak sliders, which were a big hit. This year, I’m looking forward to cooking food alongside soup kitchen chef David and several of New York City’s top chefs, and to meeting more of Holy Apostles’ supporters. David and I will be preparing two recipes from Award-Winning Chef and Author Rozanne Gold’s Radically Simple: Asian green gazpacho and smoked salmon quesadillas.

I’m writing to ask you to come celebrate with me. I hope you’ll take the opportunity to experience great food from chefs all over New York City, support a great cause, and have a good time. I look forward to seeing you on May 15th!
